Lectins are proteins, specifically carbohydrate-binding proteins, that can bind itself to the digestive tract. It can be found within both animal and plant foods. In terms of how lectin can affect an individual's health, it can be toxic when he or she has consumed a high amount of it. If this is the case, this individual may then experience gut problems such as weight gain or even a leaky gut. What exactly is a lectin-free diet, you may ask? It is when a person avoids casein A1 milk, 'free-range' meats that are corn-fed, and corn entirely. This individual would then limit his or her intake of grains, beans, nightshade vegetables, and in-season fruit. As for what this individual would eat, he or she may eat a lot of leafy greens, cauliflower, sweet potatoes, olives, avocados, as well as his or her favorite kind of white bread. A gluten-free diet is typically, but not exclusively, for individuals who have sensitivities to gluten. Gluten is a type of protein found in spelt, wheat, rye, and barley. People with gluten allergies can, however, still consume starchy foods, grains, unflavored dairy products, eggs, meat, and non-battered fish. A few examples of some delicious gluten-free recipes for every adventurous foodie out there would be hemp-crusted baked tenders, pesto chicken soup, and possibly even some crispy apple oat fritters as a dessert.
